AS A SANITIZER: Used in sanitizing solutions to lower pH, therefore making the SO2 solution more effective. Use 1 Tbsp per gallon along with 1 Tbsp potassium metabisulfite per gallon.
AS AN ACID IN WINE: Usually NOT added to must prior to primary or malolactic fermentation as it's metabolism can lead to volatile acidity. Tartaric acid is a better product for this, but if no tartaric acid is available, use citric acid at a rate of 1 teaspoon per gallon to raise acidity by 0.1%
